im positive this tastes great but its not that crazy or a new idea in any way
people have been cooking in bacon fat for a half a century
and im curious as to why the pancakes are made in that shape.
i would recommend using fat back and cooking small lardons until they are really crispy, then grinding the lardons and mixing them into the batter.
for me that would be more composed and quite a surprise for whoever you might serve it to.

possible served with a butter poached egg.

now that would be deadly

thumpthump....thumpthump...thuuump thuuump...thuuuump *cough sputter choke* thuuuu....
Oh the goodness of bacon grease, oh the heart slowing nectar...is there no end to your uses? Thanks muffin, just when I thought I had come up with enough ways to expand my butt, you throw bacon grease biscuits at me. lol
*walks grumbling into the kitchen to try bacon biscuits, perhaps with cheddar cheese chunks in them...and maybe some crumbled bacon for that extra bacon flavor*

Perhaps instead of calling them "Bacon Pancakes" you should change the name to "911 Pancakes".
Thanks for the butter BALL tip, but I still will not be making any. I will never get the image of the little kid eating the butter BALLS.....straight up.....out of my mind.

I actually bake my bacon on a cooking sheet in the oven, but it actually makes for more clarified drippings, you can just add them to the pan when you get ready to make the pancakes. And since the drippings were in the oven, the grease doesn't snap and pop and get all over you, because the water from the bacon that causes that reaction, has already evaporated.

One of my favourite uses of bacon grease, is as a substitute for shortening or butter, in a biscuit recipe.

bacon biscuits are awesome. Mmm, yay for bacon grease!
