My Mom is Norwegian, and aebleskivers were her childhood favorite!
Her recipe is an overnight yeasted affair...It's nice to see another version that doesn't have yeast in it....I have an aversion to yeast myself.

Thanks, Muffin!

Great recipe, and fairly forgiving, too: I had no sugar or white flour, so I used brown rice syrup and whole wheat flour - and they were tender and delicious. I believe it's the three-way leavening (baking powder, soda/buttermilk, and egg white) that makes this dish work. They reheat well in the microwave, too.

I'm glad I bought that "Pancake Puffs" set in a post-Christmas sale for only ten bux :)

My father is danish and this aebleskiver's have always been a treat in our family. When cooking them, fill the little hole half way with batter, quickly add a dollop of jam to the center and then finish filling the hole with batter. We always make them this way! Jazz it up by having several different flavors of jams (strawberry, peach, raspberry, etc). It is so rare to find someone else that knows about this fabulous treat! I got lucky with my first pan. The first apartment I moved into after leaving home had one in the kitchen cupboard...it was still brand new. Poor saps that lived there before me probably had no clue what to do with it. I was exstatic and I still have the same pan almost 20 years later!
