Bacon Pancakes
It was too frikken cold to go out last weekend so I decided to make something unique. I offer you, Bacon Pancakes:
I put down strips of pancake batter and then placed bacon which I had prepared earlier on each strip.

Bacon and butter.. together at last. Homer Simpson would be proud.

I grew up eating bacon pancakes back in the ’70s, before they invented Healthy Eating. Of course, we also dipped our Wonderbread in the bacon fat in the pan.

There is a donut shop in Portland Oregon named Voodoo donut. They have a ‘maple bacon’ donut. It is the most wonderful and delicious thing on the planet. I’ve woken up at 2am and driven to get one just because it reminds me of the bacon waffles my aunt used to make.
I’m just going to assume that your bacon pancakes were just as delicious.

i had that for dinner last night–only i fried the bacon crisp and crumbled it throught the cakes. with butter & maple syrup…oh yeah.
